About this Coffee

Natural process green beans are the most intense starting material a home roaster can work with. Whole cherries dried for 26+ days on raised beds produce beans saturated with fruit sugar and fermentation complexity — once roasted light to medium, the blueberry and grape notes are unmistakable.

These beans require careful first-crack monitoring: the natural sugars accelerate development past first crack, and it’s easy to accidentally push into a darker profile than intended. We recommend lighter heat application in the development phase and listening carefully for first crack.

The reward for attentive roasting is one of the most distinctive and rewarding coffees you can produce at home — a heavy, wine-like, deeply aromatic cup that turns heads.
