About this Coffee

Honey-process green beans look and feel different from washed: the dried mucilage creates a slightly sticky, golden-brown coating around each bean that smells of raisin and dried fruit before you even roast it. This is not a defect — it is the natural sugar that becomes stone-fruit sweetness in the cup.

Chandragiri honey process requires slightly more careful roasting than washed: the surface sugars can scorch if heat is applied too aggressively in early stages. We recommend a slow ramp to 150°C before pushing heat, then normal development. The reward is a naturally sweet, complex cup.

Outstanding for medium roast at home — roast to just past first crack and allow a full 48-hour rest before brewing.
